When collecting data, it is possible that the data I need to fill in is not available for an entity. How can I make it unavailable in the tool?

In order to make it unavailable, it is necessary to go to the data record by clicking on the pen icon as shown below:

Une fois sur la fiche, il ne reste plus qu’à appuyer sur le bouton « Je ne dispose pas de cette information ». Once you are on the record, all you have to do is press the "I do not have this information" button.
The box of the data will then be greyed out and you will just have to leave an explanation in the data sheet or go back to your collection.
